200g raw cashews (not salted)
50ml non-dairy milk (optional)
4-5 medium ripe bananas
1 teaspoon vanilla essence
Walnuts for decoration (optional)
Soak 200g cashews in luke warm water overnight.
Blend cashews (add 50ml non-dairy milk if your blender cannot cope with just the nuts).
Add the bananas and vanilla essence then blend until really smooth.
Pour the mixture into a loaf tin and add walnuts on top.
Put the tin in the freezer and freeze overnight.

I tried this last night…. was so delicious! Have some more left over for today. Have died and gone to vegan heaven! Thanks, Rich!
