Halloween Cookies

 1/2 cup rapeseed oil
 1 cup sugar
 1/4 cup pure maple syrup
 3 tablespoons 'milk'
 1 teaspoon vanilla extract
 1 teaspoon chocolate extract (or additional vanilla if you can't find chocolate)
 1 + 2/3 cups plain flour
 1/2 cup cocoa powder (not Dutch)
 1 teaspoon baking soda
 1/4 teaspoon salt
 1/2 teaspoon ground cinnamon
 1/2 teaspoon cayenne

Preheat your oven to 175C/350F

Line two baking trays with greaseproof paper

In a large bowl, mix the oil, sugar, maple syrup, and milk

Add the vanilla and chocolate extract (or the double vanilla if you don't have chocolate)

In another bowl, mix together the flour, cocoa, baking soda, salt, cinnamon, and cayenne until all mixed up

Slowly sift the dry mixture in to the wet mixture, mixing all the time, until a dark dough is formed

Take the dough and roll it out on a sheet of greaseproof paper until it is about 1/2cm thick

Use your Halloween cookie cutters to create spooky shaped cookies/biscuits

Transfer these to the lined baking trays and bake for 10-12 mins (depending how gooey/biscuity you like them)

Once cooked, removed from the oven and leave for 5 mins, then transfer to a cooling rack and let them cool completely
